We, the Minkov family, strongly believe that making good wine is an art, especially when part of this wine are the sweet juices of thousands of years of history. Blossomed in the very heart of the Rose Valley, our Château Copsa draws its knowledge and inspiration from the lands of the ancient Thracians, famous for their excellent wine. They believed in its divine origin and would celebrate the power of the elixir with mystical rituals and wild feasts in honour of god Dionysus. Meanwhile they turned into one of the best winemakers in Europe and their inheritance has been preserved through the centuries until today.

Empowered by this rich past, today we combine the ancient legends and traditions with the latest technologies so that we can make our own wine under the brand Château Copsa.
Ivan Didov Minkov was the man who passed down to our family the love for wine and his experience as a skilled winemaker and a long-time manager of the Rose Valley Winery.

Following in his father’s footsteps, Minko Minkov founded the winery in 1998. He called it Copsa – the Thracian name of one of the ancient settlements, predecessors of the town of Karlovo, where we can trace back our family roots to. Minko Minkov began buying up old vineyards with Misket from the region of Karlovo as well as empty plots of land so he could plant them with new grape varieties. He always follows the rule that fine wine is only made when the grapevines are grown as our own children – with much affection, patience and dedication. He chooses the best terroir for his offspring. The unique character of the Rose Valley infuses the fresh bouquet of Copsa with the warmth of the southern sun, the sweet smell of roses, lavender and aromatic herbs, along with the cool breeze of the Balkan Mountains. And now the third generation of the Minkov family – Petia and Ivan, continue with passion and innovative spirit to develop the family business and to create modern wines intertwined with the Valley history.

Château Copsa is one of the few family wineries where we take the control of the whole process of making the wine – from the grapes to its bottling – into our own hands. This allows us to monitor every stage of its development and make sure it lives and reveals its even more interesting and deep character notes, even when bottled. Than is why in 2005 we built a modern winemaking base with its own laboratory in the town of Klisura, situated only a few kilometres from our vineyards. And in order to ensure the proper storage of our products, in 2008 we built the majestic castle Château Copsa. Built according to the medieval architecture canons, we situated our cellar in its stone foundations and there our best selections mature in French, American and Bulgarian oak barrels.

Since then, Château Copsa is a place where we welcome and share our wine with our friends and guests. And since their number is constantly growing, in 2017 we added Maison Copsa, a boutique art hotel and restaurant. We transformed them into an alternative and discreet oasis for urban people, where among the beauty of the Rose Valley they can indulge in the slow rhythm of the château and forget about the outside world beyond its borders…Here they can spend their time in contemplation, dreams, sweet conversations with friends under the stars of the night sky or in plans for more small escapes. Of course, in the fresh and compelling company of Château Copsa’s wine.

 

AXL Karlovo Misket

Limited Edition Wine of Chateau Copsa


Our winemakers undertook the challenge to create a wine from Misket  grape that will show the very best characteristics of that typical only for Bulgaria variety.

The selection started at the vineyard – a certain plot was selected, a special method of pruning was applied, as well as leaves removal and green harvest of the grape in order to achieve higher quality of fruit with exceptional characteristics. The result is a very different and intersting wine expressing the aromas of Balkns  and Rose Valley, expressing the terroir

The colour is bright pale lemon green yellow. The palate is fresh with nuance of geranium, citrus and white flowers, that can be felt in the nose as well.
